This recipe can be used as a pastry cream for many recipes with or without the chocolate

1 quart half and half

3/4 c. granulated sugar

2 egg yolks broken

4″ stick of cinnamon

2 pang unflavored gelatin dissolved in hot water

put all ingredients into pan and stir until boiling on medium heat

boil one minute then set aside, place cinnamon stick on top, cover with waxed paper or parchment  let cool for 4-5 hours at room temp.

take cinnamon stick off and add 2 tsp vanilla  and 1/2 c. chopped semi sweet chocolate

When making cannoli: pipe into pizzelli shells and then dip each end into ground walnuts
