A big hit at the cousin reunion!

mix 1/2 lb sweet italian sausage and 1/2lb  ground pork

add 2 T fennel seeds slightly crushed

1/2 c. quick cooking oats or oat bran

1/2 c. finely chopped red apple with the skin

1/8 tsp pepper or grains of paradise

1 egg

fresh sage leaves

Mix all together and form patties and brown in cast iron skillet

in separate pan mix 1/2 c. apple jelly and 1/2 c. maple syrup….heat 

when sausage patties are browned pour warm glaze over them in the pan

top with a chiffonade of fresh sage
