Pizzelli are an Italian waffle cookie baked in a pizzelli iron. They can be flavored with vanilla, lemon, orange or the traditional anise extract. The batter can also have cocoa in it to make chocolate pizzelli. I like to flavor them with vanilla and when they come off the iron roll them into cones for cannoli.
At our recent cousin reunion, there were none left on the serving platter, so I guess they were pretty good.
Here is the recipe for the pizzelli that I use:
2/3 c. sugar
1/2 c. butter
1 tsp vanilla
1 1/2 c. ap flour
1 tsp baking powder
pinch of salt.
Blend eggs sugar until smooth add cooled melted butter vanilla. Sift flour baking powder and salt and add to egg mixture. Drop by teaspoon full into full size pizzelli iron. Follow instructions for iron. Have at the ready paper towel and a fork to remove. They cool quickly, so you’ll need an assembly line of cooling ones, ones cooled etc…
Store on a cookie sheet with a dish towel to cover. If you store in an air tight container, they lose their crispness.
