A simple and pleasant side dish.  

Keep the broccoli bright green!

Blanch Broccoli crowns in boiling water for 5 minutes.  Immediately drain and put them in an ice bath to cease the cooking.  Drain well and then toss in a bowl with olive oil and grated cheese.  I use Grano Padano almost exclusively.  Sprinkle a little black pepper on and if you wish, some red pepper flakes.  I don’t always use the red pepper.  Spread on a foil lined cookie sheet and bake for about 15 minutes.  Remove and serve.  The broccoli should stay bright green.   Enjoy!
