I serve this recipe with an Italian meal, alongside a salad or meat.

2 cans of Canellini beans.  Drained and rinsed and 1/2 can of them mashed

Mix with 2 tsp minced garlic, olive oil and lemon juice

Add 1 T finely minced red onion, 1 tsp. red pepper flakes and 3 ribs of celery finely chopped

Add 2 T coarsely chopped flat leaf parsley.

Best to let marinate for a day before eating.
